Parboiling, size and steam determine the finish

Parboiled rough-edged potatoes crisp differently from raw wedges, baby potatoes or a whole jacket potato. Let steam escape before oiling parboiled potatoes, keep pieces similar in size, and leave enough basket space to shake them.
