Space and shaking matter more than chasing one exact minute

Frozen chips, homemade chips and sweet potato fries do not behave the same way. A loose layer allows moisture to escape; a deep pile steams and cooks unevenly. Shake at least once and judge doneness by a hot, cooked centre as well as surface colour.

  • Dry homemade potato surfaces before adding a small amount of oil.
  • Shake crowded or chunky chips more than once.
  • Sweet potato fries soften and darken sooner than standard chips.
